Because coconut oil has saturated fat. What they forget to say about coconut oil is that there is also good fat in it (polyunsaturated %26amp; monounsaturated). The nutrients in coconut oil outweigh the saturated fat. According to my nutrition book, coconut oil has more saturated fat and less mono- and polyunsaturated fats than any other type of commonly used oil. Saturated fat doesn't really have any health benefits. I haven't done much reading about coconut oil in particular, though. Of course, it can be included in a healthy diet if eaten in moderation, just like anything else. But in my opinion, olive oil and canola oil are much better choices.
